AmericanGirlFan reader, Mackenzie, recently asked me in a comment if I had any American Girl Julie recipes. I thought it would be groovy if I posted some recipes that Julie would have made. I did some research on 70's recipes and here are two that I found that I thought sounded yummy! :)
Almond Cookies
Ingredients:
- 1 cup all-purpose flour
- 1 cup ground almonds
- 1/4 teaspoon baking powder
- dash salt
- 1/2 cup butter, softened
- 3/4 cup granulated sugar
- 1 large egg white
- 1/2 teaspoon almond extract
- 48 whole blanched almonds
Preparation:
Stir together flour, ground almonds, baking powder, and salt; set aside.
In a mixing bowl cream butter and sugar at medium speed of electric hand held mixer. Beat in egg white and almond extract.
Stir flour and ground almond mixture into the creamed mixture. Cover with plastic wrap; chill for about 2 hours.
Shape dough into small balls, about 3/4-inch. Place balls 2 inches apart; flatten slightly with the bottom of a glass. Press an almond into the center of each cookie. Bake at 350° for about 12 minutes, or until set but not browned.
Makes about 4 dozen almond cookies.
Easy Bacon and Cheese Quiche (serves 6 people)
Ingredients
- 1 (3 ounce) can bacon bits
- 1/2 cup chopped onion
- 5 ounces shredded Swiss cheese
- 3 ounces grated Parmesan cheese
- 1 (9 inch) deep dish frozen pie crust
- 4 eggs, lightly beaten
- 1 cup half-and-half cream
Directions
- Preheat oven to 400 degrees F (200 degrees C).
- In a medium bowl, mix the bacon, onions, and both cheeses. Place this mixture in the unthawed pie crust.
- Mix the eggs and half and half in a bowl. Pour the egg mixture over the cheese mixture.
- Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake for an additional 35 minutes, until top of quiche begins to turn brown.
I found out that other popular homemade 70s foods were Fondue of all kinds, Hot dog roll-ups, Pistachio cake, Carrot cake, and Ceasar salad. You can find lots of these recipes and more in Julie's Cooking Studio book. :)
